I haven't used methi leaves before. What's best - dried or fresh? And at what stage should they be used?

I personally like dried methi leaves (kasoori methi) and believe that is what BIR’s use (rather than fresh).
It is usually added at the spice fry stage but some do add it later. There is an interesting thread on methi here.

As always,fresh is best.
And it is no real effort to sprout the seeds.
They will also grow under glass in the summer.
My problem with buying fresh is it always seens to be full of dust, and needs a good wash.

Dried is distinctly different, to fresh, charlie. So, unless you're planning on dehydrating your fresh, fresh is definitely not always better (certainly not in this case).

I grew fresh methi from seed in the greenhouse a few summers ago.
About the same time, I experimented with sprouting the seeds, mung bean fashion.
Not season dependant,really pungent, but requires some planning ahead.
